Ingredients list for the Instant Pot Ground Beef Lasagna Soup
- 1 tablespoon extra virgin olive oil
- 1 pound lean ground beef
- 1/2 onion, diced
- 1/2 large bell pepper (green, red, or yellow), diced
- 2 cloves garlic, minced
- 1 28-ounce jar marinara sauce
- 1 14-ounce can crushed tomatoes
- 3cups of beef stock
- 1/4 cup chopped fresh parsley
- 1 tablespoon Italian Seasoning
- Salt and pepper
- 1/2 lb dry lasagna noodles, broken up
- 1cupshreddedMozzarella cheese

Directions
1. To make the Instant Pot Beeflasagna soup: Press the saute function and once your Instant pot is hot, add the ground beef, salt, and pepper. When the meat is almost cooked, press cancel. Add in the marinara sauce, crushed tomatoes, garlic, onion, bell pepper, Italian seasoning, salt and pepper. Mix to combine.
2. Add the noodles on top of theground beef, veggie and sauce mixture. Add beef stock on top of the noodles. Gently press down any noodles that are not submerged. Place the lid on your Instant Pot. Secure and set to sealing. Set the time to 5 minutes on high pressure.
3. When the pressure cycle is done, quick release the pressure and carefully remove the lid. Add the mozzarella on top of the lasagna soup. Place the lid back on to melt the cheese until mozzarella is all melted. Serve the Instant PotbeefLasagna soup immediately, garnished with parsley and more cracked black pepper. Enjoy!

Delicious! Deserving of the best red wine you have! Instead of shredded mozzarella I added the small Ciliegine fresh mozzarella balls. Mama Mia, sooo good! Serve with Caesar salad.
