CHURRO BATTER

  • 1 cup gluten-free baking flour
  • 3 tbsp cornstarch
  • 1 cup water
  • ¼ cup unsalted butter, diced into small cubes
  • 3 tbsp sugar
  • ¼ tsp salt
  • 1 large egg, room temperature
  • ½ tsp vanilla extract
  • 1 tsp ground cinnamon
  • Oil for frying (we recommend peanut or corn oil)

SUGAR CINNAMON COATING

  • ½ cup white sugar
  • ¼ tsp ground cinnamon

CHOCOLATE DIPPING SAUCE

  • ¼ cup milk
  • 1 tsp butter, softened
  • ½ cup bittersweet chocolate, chopped

To Make the Sugar Cinnamon

On a shallow plate, mix the sugar and ground cinnamon. Set it aside.

To Make the Chocolate Dipping Sauce

  1. In your double boiler, heat the milk just until it starts bubbling.
  2. Turn off the heat and add the chopped chocolate.
  3. Whisk until the chocolate is fully melted. Add the butter and mix until incorporated. Pour into a thin glass (for dipping) and set aside

Making & Frying the Churros Dough

  2. Add gluten-free baking flour and cornstarch into a mixing bowl. Mix well until fully incorporated.
  3. In a saucepan, heat the water, butter, sugar, and salt over medium heat until boiling.
  4. As soon as the liquid boils, turn the heat off. Quickly mix the flour mixture into the saucepan and combine until smooth. You’ll know when it’s done when the batter doesn't stick to the walls of the pan.
  5. Pour the dough into a large mixing bowl.
  6. Using a low-speed electric mixer or whisk, continue mixing to release hot steam within the dough. Note: If the batter is too hot, it will cook the egg.
  7. Once the dough has cooled considerably, add the egg, vanilla extract, and cinnamon. Mix well until incorporated and smooth.
  8. Transfer the dough into a piping bag with a star tip already attached.
  9. Pour oil into a large heavy bottom pan or deep fryer (around 2 inches from the bottom of the pan). Heat to 375°F/190°C on medium heat.
  10. Pipe 3-4 churros (at the length of your choice) into the oil. Cut off the ends using scissors or a sharp knife.
  11. Fry for 2-3 minutes per side or until golden brown.
  12. Transfer to a paper towel-lined plate and allow them to dry for about 1 minute.
  13. While still warm, roll the churros in the cinnamon/sugar mixture, then drizzle – or dip – them into the chocolate coating.
  14. Repeat the process with the rest of the dough.

Ingredients

For the gluten-free churro batter

  • 1 cup water
  • ¼ cup unsalted butter, diced into small cubes
  • 3 tbsp sugar
  • ¼ tsp salt
  • 1 cup Gluten Free Baking Flour
  • 3 tbsp cornstarch
  • 1 large egg, room temperature
  • ½ tsp vanilla extract
  • 1 tsp ground cinnamon

For the coating

  • Choco Coating - ¼ cup milk - 1 tsp butter, soften - ½ cup bittersweet chocolate, chopped
  • Sugar Cinnamon Coating - ½ cup sugar - ¼ tsp ground cinnamon

Instructions

    FOR THE GLUTEN-FREE CHURROS DOUGH

    1. Add gluten-free baking flour and cornstarch into a mixing bowl and mix well until incorporated.
    2. In a saucepan, heat the water, butter, sugar, and salt over medium heat until boiling.
    3. Soon after the mixture’s boiling, turn the heat lower. Add the flour mixture into the saucepan and mix fast until it's smooth and doesn't stick to the walls of the pan.
    4. Turn off the heat and pour the dough into a large mixing bowl.
    5. Using a low-speed electric mixer or wooden spatula, release the hot steam in the dough.
    6. After the dough is cooling down, add a large egg, vanilla extract, and cinnamon. Mix well until incorporated and smooth.
    7. Transfer the dough into a piping bag with a star tip.

    FOR MAKING THE COATING

    1. Sugar Cinnamon Coating: On a shallow plate, mix sugar and ground cinnamon. Set it aside.
    2. Choco Coating: In a small saucepan, heat milk just until little bubbling. Turn off the heat and add the chopped chocolate. Mix well until the chocolate is fully melted. Add the butter and mix until incorporated. Pour into a slim high glass.

    FRYING AND ASSEMBLING THE CHURROS

    1. In a large heavy bottom pan or deep fryer, heat the oil (around 2 inches from the bottom of the pan) over medium heat.
    2. Pipe 3-4 inches of the dough into the pan and cut off from the star tip by using a scissor or very sharp knife. Fry in batches, just 3 or 4 churros in a batch.
    3. Fry for 2-3 minutes per side or until golden brown. Transfer to a paper towel-lined plate.
    4. Allow the churros to dry for about 1 minute. While the churros are still warm, roll them in the cinnamon/sugar mixture then dip into the chocolate coating about 1⁄3 of the length.
    5. Repeat the process with the rest of the dough.
